Harvest Sausage Apple & Mushroom Skillet
Harvest Sausage, Apple & Mushroom Skillet
Sweet, Savory and Made for Crisp Fall Evenings
Golden sausage, sautéed apples and earthy mushrooms come together with creamy white beans in one seriously cozy skillet. A little thyme, Dijon and apple cider vinegar balance the sweetness while melted sharp cheddar gives the whole thing a rich finish. It’s rustic, hearty and exactly the kind of meal that makes you happy the temperature finally dropped.
Serves: 6
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Ingredients
For the Skillet
- 1 lb mild Italian sausage or smoked sausage, sliced or crumbled
- 1 Tbsp olive oil, if needed
- 1 small yellow onion, thinly sliced
- 8 oz cremini or baby bella mushrooms, sliced
- 2 cloves garlic, minced
- 2 Honeycrisp or Gala apples, cored and cut into bite-size chunks
- 1 (15 oz) can cannellini beans, drained and rinsed
- 1 tsp dried thyme
- ½ tsp smoked paprika
- 1 Tbsp Dijon mustard
- ½ cup chicken broth
- 1 Tbsp apple cider vinegar
- Salt and black pepper, to taste
- 1 cup shredded sharp white cheddar
For Finishing
- Chopped fresh parsley or thyme
- Extra cracked black pepper
- Crusty bread, optional
Directions
1️⃣ Brown the Sausage
Heat a large cast-iron skillet over medium-high heat.
Add the sausage and cook for 5–7 minutes until browned and cooked through.
If using crumbled sausage, break it into rough, irregular pieces as it cooks.
Transfer to a plate, leaving a little of the rendered fat in the skillet.
2️⃣ Brown the Mushrooms
Add olive oil if the skillet looks dry.
Add the onion and mushrooms and cook for 5–6 minutes, stirring occasionally, until the mushrooms are browned and the onion begins to soften.
Don’t stir them constantly. Giving the mushrooms a little time against the hot skillet helps them actually brown instead of steam.
3️⃣ Add the Apples
Stir in the garlic, apples, thyme and smoked paprika.
Cook for 3–4 minutes until the apples begin to soften around the edges but still hold their shape.
We’re making dinner here, not applesauce. 😂
4️⃣ Bring It Together
Return the sausage to the skillet.
Add the white beans, Dijon and chicken broth.
Stir gently and simmer for 4–5 minutes until everything is hot and the broth reduces into a light savory sauce.
5️⃣ Brighten It Up
Stir in the apple cider vinegar.
Taste and season with salt and black pepper as needed.
That little hit of vinegar keeps the apples from making the skillet overly sweet and wakes up all the savory flavors.
6️⃣ Bring on the Cheese
Sprinkle the shredded cheddar over the skillet.
Cover for 2–3 minutes until the cheese is melted.
Finish with fresh parsley or thyme and cracked black pepper.
Serve straight from the skillet with crusty bread if you want something to soak up every last bit.
RVD Signature Twists
- Bacon Harvest – Add chopped crispy bacon just before the cheese goes on.
- Gruyère Upgrade – Swap the cheddar for Gruyère for a richer, slightly nutty finish.
- Sweet Heat – Use hot Italian sausage and add a drizzle of hot honey just before serving.
- Extra Hearty – Add 1½ cups cooked baby potatoes along with the white beans for an even more filling dinner.
- Oktoberfest Style – Use smoked bratwurst instead of Italian sausage and replace the chicken broth with a splash of amber beer.
