Ingredients

For the Potatoes

  • 4 large russet potatoes
  • 2 Tbsp olive oil
  • 1 tsp kosher salt

For the Burnt Ends

  • 2 lbs smoked brisket burnt ends (or chopped smoked brisket)

  • Extra BBQ sauce for drizzling
  • Chopped parsley (optional)

Directions

1️⃣ Bake the Potatoes

Rub potatoes with olive oil.

Sprinkle generously with kosher salt.

Bake at 400°F for 50–60 minutes, or cook in the air fryer at 400°F for 40–45 minutes, until fork tender.

2️⃣ Heat the Burnt Ends

While the potatoes bake, combine:

  • Burnt ends
  • BBQ sauce

Heat in a cast-iron skillet or saucepan over medium heat for about 8–10 minutes, stirring occasionally, until everything is hot, glossy and caramelized.

3️⃣ Prepare the Potatoes

Slice each baked potato lengthwise.

Fluff the inside with a fork.

Season lightly with salt and pepper.

4️⃣ Build the Bowls

Fill each potato with:

  • Sharp cheddar cheese
