Blueberry Lemon Campfire Cobbler

Summer’s Last Sweet Bite

This one feels like the perfect farewell to summer. Fresh blueberries bubble into a rich, jammy filling while a buttery, golden biscuit topping bakes until crisp on top and tender underneath. Finish it with a scoop of vanilla ice cream melting into the warm berries and you’ve got campground dessert perfection.

Ingredients

Filling

  • 5 cups fresh blueberries
  • ⅓ cup granulated sugar
  • ¼ cup brown sugar
  • 2 Tbsp cornstarch
  • Zest of 1 lemon
  • 2 Tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt

Cobbler Topping

  • 1½ cups all-purpose flour
  • ⅓ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 6 Tbsp cold butter, cubed
  • ½ cup buttermilk
  • 1 tsp vanilla extract

Finishing

  • 2 Tbsp coarse sugar
  • Vanilla ice cream
  • Fresh mint (optional)

Directions

1️⃣ Prepare the Filling

In a large bowl combine:

  • Blueberries
  • Granulated sugar
  • Brown sugar
  • Cornstarch
  • Lemon zest
  • Lemon juice
  • Vanilla
  • Salt

Pour into a buttered 10-inch cast-iron skillet or Dutch oven.

2️⃣ Make the Topping

Whisk together:

  • Flour
  • Sugar
  • Baking powder
  • Salt

Cut in the cold butter until the mixture resembles coarse crumbs.

Stir in buttermilk and vanilla just until combined.

Do not overmix.

3️⃣ Assemble

Drop large spoonfuls of dough over the blueberry filling.

Leave small gaps so the bubbling berries peek through.

Sprinkle with coarse sugar.

4️⃣ Bake

Oven:
Bake at 375°F for 35–40 minutes.

Campfire Dutch Oven:
Place 8–10 coals underneath and 16–18 coals on top.
Bake about 35 minutes, rotating the oven every 10 minutes.

The topping should be deep golden and the filling bubbling around the edges.

5️⃣ Serve

Let cool for 10 minutes.

Serve warm with a generous scoop of vanilla ice cream.
