Skillet Tuscan Sausage & White Beans

Creamy, garlicky, and loaded with Italian comfort, this one-skillet wonder delivers big “Tuscan kitchen” flavor with campground-friendly ease. It’s hearty without being heavy and fancy without being fussy.

Ingredients

  • 1 lbs Italian sausage (mild or spicy), casings removed
  • 1 Tbsp olive oil (if needed)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • ½ tsp dried Italian seasoning
  • ¼ tsp crushed red pepper flakes (optional)
  • Salt & black pepper, to taste
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 (15 oz) can cannellini or Great Northern beans, drained & rinsed
  • ⅓ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • ¼ cup grated Parmesan cheese

Directions

  1. Heat a large skillet over medium heat. Add sausage and cook, breaking it up, until browned and fully cooked. Remove sausage and set aside.
  2. If the pan is dry, add olive oil. Sauté onion until soft, about 3–4 minutes. Add garlic and cook 30 seconds until fragrant.
  3. Stir in Italian seasoning and red pepper flakes. Season lightly with salt and pepper.
  4. Pour in chicken broth, scraping up any browned bits. Let simmer for 2 minutes.
  5. Add heavy cream, beans, sun-dried tomatoes, and cooked sausage. Stir to combine.
  6. Simmer gently for 5–7 minutes until slightly thickened.
  7. Stir in spinach and cook until just wilted.
  8. Finish with Parmesan cheese. Taste and adjust seasoning.
