Campfire Chicken Fajita Foil Packets

When the day’s adventures are done and you’re ready to relax around the campsite, these Campfire Chicken Fajita Foil Packets deliver everything you love about sizzling fajitas without hauling out a pile of pots and pans. Tender seasoned chicken, buttery Yukon Gold potatoes, sweet peppers, and onions steam together in their own foil packet for a hearty, flavor-packed meal that’s practically made for RV life.
Ingredients
- 1 Tbsp chili powder
- 2 tsp sweet paprika
- 1¼ tsp kosher salt
- 1 tsp dried oregano
- ¾ tsp garlic powder
- ¾ tsp granulated sugar
- ¾ tsp ground cumin
- Cooking spray
- 1 lb Yukon Gold potatoes, scrubbed and sliced into ¼-inch half moons
- 4 medium red and green bell peppers, seeded and thinly sliced
- 1 medium red onion, thinly sliced
- 1½ lbs boneless skinless chicken thighs, cut into 1- to 2-inch chunks
- 4 Tbsp butter
For Serving
- Warm flour tortillas
- Sour cream
- Shredded cheddar cheese
- Sliced avocado
- Lime wedges
Directions
1️⃣ Build the Spice Blend
In a medium bowl, combine chili powder, paprika, salt, oregano, garlic powder, sugar, and cumin.
2️⃣ Prep the Packets
Lay four large sheets of heavy-duty foil on a flat surface and lightly coat with cooking spray.
Divide potatoes evenly among the packets. Top with sliced peppers and onions.
Sprinkle each packet with about 1 teaspoon of the spice mixture.
3️⃣ Season the Chicken
Add chicken chunks to the remaining spice blend and toss until well coated.
Divide chicken evenly among the packets and top each with 1 tablespoon butter.
4️⃣ Seal & Cook
Fold foil tightly around ingredients, sealing all edges.
Place on a preheated medium-high grill and cook for 18-22 minutes, rotating halfway through cooking.
Chicken should reach 165°F and vegetables should be tender.
5️⃣ Serve
Carefully open packets and serve with warm tortillas, sour cream, cheddar cheese, avocado, and fresh lime wedges.
