Campfire Beer Brats with Grilled Peppers & Onions

A Backyard Classic That Was Born for RV Life

Few things say summer like a bratwurst sizzling on the grill. These Campfire Beer Brats take things a step further by simmering in beer with sweet onions before getting a smoky finish over the flames. Piled high with grilled peppers and onions on a toasted bun, this campground favorite is easy to make, incredibly satisfying, and practically guaranteed to draw hungry neighbors to your campsite.

Ingredients

For the Brats

  • 8 bratwurst links
  • 2 (12 oz) bottles lager beer
  • 1 large yellow onion, sliced
  • 2 Tbsp butter

For the Grilled Peppers & Onions

  • 2 bell peppers (red, yellow, or orange), sliced
  • 1 large onion, sliced
  • 1 Tbsp olive oil
  • Salt and black pepper to taste

For Serving

  • 8 brat buns
  • Spicy brown mustard
  • Sauerkraut (optional)
  • Pickle spears

Directions

1️⃣ Simmer the Brats

In a large skillet or Dutch oven, combine beer, sliced onion, butter, and bratwurst.

Bring to a gentle simmer and cook for 15–20 minutes.

Do not boil aggressively or the brats may split.

2️⃣ Grill the Vegetables

Toss peppers and onions with olive oil, salt, and pepper.

Grill in a basket or cast-iron skillet until softened and lightly charred, about 8–10 minutes.

3️⃣ Finish the Brats

Transfer brats from the beer bath directly to a hot grill.

Cook 5–7 minutes, turning occasionally until nicely browned and slightly charred.

4️⃣ Toast the Buns

Place buns cut-side down on the grill for 1–2 minutes until lightly toasted.

5️⃣ Assemble

Place a brat in each bun.

Top generously with grilled peppers and onions.

Finish with mustard, sauerkraut, or your favorite toppings.
