Honey Glazed Carrot & Goat Cheese Tart

Golden puff pastry layered with creamy goat cheese, tender honey-roasted carrots, and fresh herbs — this elegant tart is light, flavorful, and bursting with springtime color.
Ingredients
- 1 sheet puff pastry, thawed
- 1 lb carrots, peeled and halved lengthwise (or rainbow carrots for extra pop)
- 2 Tbsp olive oil
- 2 Tbsp honey
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt & black pepper, to taste
- 4 oz goat cheese, softened
- 2 Tbsp cream cheese (for extra creaminess)
- 1 clove garlic, minced
- 1 tsp lemon zest
- 1 egg (for egg wash)
- Fresh parsley or thyme, for garnish
Directions
Roast the Carrots
- Preheat oven to 400°F.
- Toss carrots with olive oil, honey, thyme, salt, and pepper.
- Roast for 20–25 minutes until tender and slightly caramelized.
- Set aside.
Prep the Pastry
- Roll out puff pastry slightly on a floured surface.
- Place on a parchment-lined baking sheet.
- Score a 1-inch border around the edges (don’t cut all the way through).
- Prick the center with a fork.
Make the Cheese Layer
- Mix goat cheese, cream cheese, garlic, and lemon zest until smooth.
- Spread evenly inside the scored border.
Assemble
- Arrange roasted carrots over the cheese layer.
- Brush edges of pastry with egg wash.
Bake
Bake for 18–22 minutes until pastry is golden and puffed.
Finish
- Drizzle with a little extra honey
- Sprinkle with fresh herbs
- Optional: crack fresh black pepper on top
