Lemon Garlic Butter Chicken & Spring Veggies
(One Pan Comfort with a Fresh Spring Twist)
Juicy, golden chicken roasted with tender baby potatoes, sweet carrots, and crisp asparagus, all coated in a rich lemon garlic butter sauce. This one-pan meal is cozy enough for chilly nights but bright enough to welcome spring.
Ingredients
- 4 bone-in, skin-on chicken thighs (or breasts)
- 1 lb baby potatoes, halved
- 2 carrots, sliced into chunks
- 1 bunch asparagus, trimmed
- 3 Tbsp olive oil
- 3 Tbsp butter, melted
- 4 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt & black pepper, to taste
- 2 Tbsp fresh parsley, chopped
- Lemon slices, for garnish
Directions
- Preheat oven to 400°F.
- Prep the veggies:
On a large sheet pan, toss potatoes and carrots with 2 Tbsp olive oil, salt, pepper, and half the Italian seasoning. Spread evenly. - Start roasting:
Roast potatoes and carrots for 15 minutes (they take longer than asparagus). - Season the chicken:
In a small bowl, mix melted butter, garlic, lemon zest, lemon juice, paprika, remaining Italian seasoning, salt, and pepper.
Rub mixture all over the chicken. - Add chicken to pan:
Remove sheet pan from oven and nestle chicken among the veggies. - Continue roasting:
Roast for 20 minutes. - Add asparagus:
Toss asparagus with remaining 1 Tbsp olive oil and add to the pan. - Final roast:
Return to oven and cook another 10–15 minutes, until chicken reaches 165°F and veggies are tender. - Finish & serve:
Sprinkle with fresh parsley and serve with lemon slices.
