Lemon Butter Shrimp with Asparagus
Light, buttery, and bursting with fresh lemon flavor, this one-skillet shrimp and asparagus dish is elegant enough for a special night and easy enough for a weeknight at the campsite. Ready in under 20 minutes, it’s bright, satisfying, and packed with fresh flavor.
Ingredients

1 lb large shrimp, peeled and deveined

Salt & black pepper, to taste

2 Tbsp olive oil

2 Tbsp butter
-
3 cloves garlic, minced
-
1 lb fresh asparagus, trimmed and cut into 2-inch pieces

Zest of 1 lemon
-
Juice of 1 lemon
-
¼ tsp crushed red pepper flakes (optional)

2 Tbsp fresh parsley, chopped

Lemon slices, for garnish
Directions

Season the shrimp lightly with salt and pepper.

Heat olive oil in a large skillet over medium-high heat.

Add shrimp in a single layer and cook 1–2 minutes per side until pink and just cooked through. Remove and set aside.

Reduce heat to medium. Add butter to the skillet and allow it to melt.

Stir in garlic and sauté 30 seconds until fragrant.

Add asparagus and cook 3–5 minutes, stirring occasionally, until tender-crisp.

Stir in lemon zest, lemon juice, and red pepper flakes.

Return shrimp to the skillet and toss gently for 1–2 minutes until everything is coated in that glossy lemon butter sauce.

Sprinkle with fresh parsley and garnish with lemon slices before serving.
