Spring Herb Chicken with Lemon Orzo

Juicy herb-roasted chicken paired with bright, creamy lemon orzo makes this the perfect transitional meal for March. It’s fresh, comforting, and full of vibrant flavor — the kind of dinner that feels like winter loosening its grip while spring starts peeking in.
Ingredients
For the Chicken
- 4 bone-in, skin-on chicken thighs (or breasts)
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1 Tbsp fresh thyme, chopped (or 1 tsp dried)
- 1 Tbsp fresh rosemary, chopped (or 1 tsp dried)
- Zest of 1 lemon
- Salt & black pepper, to taste
For the Lemon Orzo
- 1 cup dry orzo pasta
- 2 cups chicken broth
- ½ cup heavy cream (or half-and-half)
- Juice of 1 lemon
- ½ cup grated Parmesan cheese
- 2 Tbsp butter
- 2 Tbsp fresh parsley, chopped
- Salt & pepper to taste
Directions
Roast the Chicken
- Preheat oven to 400°F.
- Pat chicken dry and place on a sheet pan.
- In a small bowl, mix olive oil, garlic, thyme, rosemary, lemon zest, salt, and pepper.
- Rub mixture evenly over chicken.
- Roast for 35–45 minutes, until golden and internal temp reaches 165°F.
- Let rest 5 minutes before serving.
Make the Lemon Orzo
- In a medium saucepan, bring chicken broth to a boil.
- Add orzo and cook 8–10 minutes, stirring occasionally, until tender and most liquid is absorbed.
- Stir in butter, cream, lemon juice, and Parmesan.
- Cook 1–2 minutes until creamy.
- Finish with parsley and adjust seasoning.
Serving Suggestions
- Serve chicken over a bed of lemon orzo
- Garnish with extra fresh herbs and lemon wedges
- Add roasted asparagus or green beans on the side
