Savory Sausage & Cheddar Dutch Baby Skillet

Fluffy, golden, and wildly comforting, this savory Dutch baby skillet is part pancake, part casserole, and all kinds of cozy. Loaded with seasoned sausage and sharp cheddar, it’s the perfect cold weather recipe when you want something fun, filling, and just a little indulgent—without a ton of fuss.


Ingredients

  • ½ lb breakfast sausage (mild or spicy)

  • 1 Tbsp butter

  • 3 large eggs

  • ¾ cup milk

  • ¾ cup all-purpose flour

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp garlic powder

  • 1 cup shredded sharp cheddar cheese

  • 2 green onions, sliced

  • Optional toppings: sour cream, fresh herbs, hot honey


Directions

  1. Preheat oven to 425°F. Place a 10-inch cast iron skillet in the oven while it heats.

  2. Cook sausage in a separate pan over medium heat until browned and cooked through. Drain and set aside.

  3. In a blender or bowl, whisk eggs, milk, flour, salt, pepper, and garlic powder until smooth.

  4. Carefully remove hot skillet from oven and add butter, swirling to coat.

  5. Pour batter into skillet—it should sizzle immediately.

  6. Sprinkle cooked sausage and cheddar evenly over the batter.

  7. Return skillet to oven and bake 18–22 minutes, until puffed and deeply golden.

  8. Remove from oven, top with green onions, and serve immediately (it will deflate slightly—normal and delicious).
