These Street Corn Chicken Tacos are loaded with juicy, seasoned chicken and topped with a creamy, zesty street corn mixture that brings just the right balance of smoky, tangy, and fresh flavors. Perfect for easy RV cooking, they’re messy in the best way and guaranteed to disappear fast.
Ingredients
For the Chicken:
- 1 lb boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- Juice of 1 lime
- Salt & black pepper
Street Corn Topping:
- 1 ½ cups corn (fresh, canned, or frozen & thawed)
- 2 tbsp mayo
- 2 tbsp sour cream
- ½ cup crumbled cotija (or feta)
- ¼ cup chopped cilantro
- Juice of ½ lime
- ½ tsp chili powder
- Pinch of salt
For Serving:
- Small flour or corn tortillas
- Extra cilantro
- Sliced avocado
- Lime wedges
- Optional: hot sauce or jalapeños
Directions
- Season & Cook the Chicken
- Toss chicken with oil, spices, lime juice, salt, and pepper.
- Grill option: Cook over medium heat 5–7 minutes per side until juicy and slightly charred.
- Skillet option: Cook in a hot pan 6–8 minutes per side until golden and cooked through.
Let rest, then slice or chop.
- Make the Street Corn Mix
- In a bowl, combine corn, mayo, sour cream, cheese, cilantro, lime juice, chili powder, and salt.
- Stir until creamy and slightly messy (the good kind of messy 😏).
- Warm the Tortillas
- Heat directly over flame or in a dry skillet until soft and lightly charred.
- Build the Tacos
- Add chicken
- Spoon on that creamy street corn magic
- Top with avocado, cilantro, and a squeeze of lime
