Guinness Beef Hand Pies
Rich, savory beef slow-simmered in a Guinness-infused gravy, tucked inside flaky pastry and baked until golden. These rustic Irish-inspired hand pies are portable, comforting, and perfect for March gatherings or campsite pub vibes.
Ingredients
For the Filling
- 1 lb beef stew meat or beef chuck, finely diced
- Salt & black pepper
- 2 Tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, finely diced
- 1 Tbsp tomato paste
- 1 Tbsp flour
- ¾ cup Guinness stout
- ½ cup beef broth
- 1 tsp fresh thyme (or ½ tsp dried)
- ½ tsp rosemary
- ½ cup frozen peas
For the Pastry
- 1 package refrigerated pie crust (or puff pastry for extra drama)
- 1 egg, beaten (for egg wash)
Directions
1️⃣ Make the Filling (20–25 minutes)
- Season beef with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Brown beef well (this builds flavor).
- Add onion, garlic, and carrots. Cook 3–4 minutes.
- Stir in tomato paste and flour. Cook 1 minute.
- Pour in Guinness and beef broth, scraping up browned bits.
- Add thyme and rosemary. Simmer 15 minutes until thick and saucy.
- Stir in peas and cool mixture slightly.
👉 The filling should be thick, not soupy.
2️⃣ Assemble the Hand Pies
- Preheat oven to 400°F.
- Roll out pie crust and cut into 4–6 inch circles.
- Spoon 2–3 Tbsp filling into center of each circle.
- Fold over to form half-moons.
- Crimp edges with fork to seal.
- Brush tops with egg wash.
- Cut small slits in top for steam.
3️⃣ Bake
Bake 18–22 minutes until golden brown and flaky.
Cool slightly before serving (molten beef lava is real 😄).
Serve With
- Mustard or horseradish sauce
- Simple green salad
- Colcannon or roasted potatoes
- A glass of stout (for authenticity, obviously)
