Irish Cheddar & Chive Breakfast Bake
Savory eggs, sharp Irish cheddar, crispy bacon, and fresh chives baked into a fluffy, sliceable breakfast casserole. It’s hearty enough for cool March mornings but bright enough to feel like spring is on the way.
Ingredients
- 8 large eggs
- 1 cup whole milk (or half-and-half for richer texture)
- 1 ½ cups shredded sharp Irish cheddar
- 6 slices bacon, cooked and chopped
- ½ cup diced onion
- ½ cup diced bell pepper
- ¼ cup chopped fresh chives
- 1 tsp Dijon mustard
- Salt & black pepper to taste
- 2 cups cubed crusty bread (optional for more body)
Directions
- Preheat oven to 375°F.
- In a large bowl, whisk eggs, milk, Dijon, salt, and pepper.
- Stir in cheese, bacon, onion, bell pepper, and chives.
- Fold in bread cubes if using.
- Pour into a greased baking dish.
- Bake 30–35 minutes until set and lightly golden.
- Let rest 5–10 minutes before slicing.
